Summary: The destination of processed solid waste during the processing of crustaceans is the great challenge of the fishing industry. These residues are composed of exoskeleton (shell, head and appendages) of crustaceans, and are responsible for approximately 70% of the animal`s weight. As bioconversions of solid waste being a viable alternative for reuse, as they are composed of proteins, pigments and chitin. Chitin is the second most abundant polysaccharide on earth, and when subjected to high temperatures in an alkaline medium, it transforms into chitosan, a copolymer of high commercial value. The aim of the study was to obtain chitosan through the combination of different species of crustaceans, in addition to analyzing the state of the art regarding research aimed at chitosan around the world.
